About Chef Luciano Schipano
Chef Luciano Schipano was born in Canada and raised in Italy, where he fell in love with cooking early, learning firsthand how a few simple ingredients can become something incredible. He trained in culinary management and spent five years studying food and nutrition before ultimately choosing food as his life’s work.
After relocating to Toronto, Luciano became an educational chef focused on helping people understand what food does for the body. In recent years, he’s focused heavily on gluten-free cooking and teaching families that you don’t have to choose between flavour and health.
He also runs a cooking club for kids, showing them practical, real-world differences in nutrition (like an avocado vs. a tomato), and how affordable, homemade meals can beat low-quality chain options.
The Challenge
How do you cook for people with real dietary sensitivities, like gluten, while still delivering meals that taste great and support health? That’s the challenge Luciano sees every day.
Luciano believes nutritional analysis should be disclosed. As a chef, he feels responsible not only for flavour, but for his guests’ health, and for helping families understand what they’re eating.
But without an easy way to run nutritional analysis, it’s hard to prove what a recipe contains, compare options, and make smart adjustments (like balancing calories or creating cholesterol-free versions) while developing new meals and teaching others.
