About Boundary Labels
BonBon Collections is a Montreal-based bakery founded by Thao Nguyen after discovering her daughter Olivia’s severe food allergies. The mission is simple: give kids with allergies a “normal childhood”, full of sweets, but free from allergens.
BonBon’s cupcakes, cakes, and pies are made without the top ten major allergens, using fresh ingredients and no artificial colouring or flavours (they use real berries or natural fruit juice for colour). They also prioritize eco-friendly packaging, using recyclable and compostable materials.
The demand is real. BonBon serves customers with allergies and intolerances, vegan diets, and anyone looking for healthier ingredients, and the business grew quickly, expanding toward multiple locations and retail/restaurant partnerships.
The Challenge
How do you protect people with severe allergies while constantly improving recipes and still keep nutrition information accurate and up to date? That was BonBon Collections’ challenge.
Ingredient integrity is critical, so BonBon needs to closely track every recipe ingredient. But traditional nutrition analysis routes were a bad fit: hiring a nutritionist is costly, and sending recipes to a nutritionist or lab meant waiting up to three weeks for results, too slow for seasonal products like pumpkin pie or apple crisp.
Even worse, BonBon is always refining recipes. Every ingredient change (or even a quantity change) created another round of cost and delay, making it hard to move fast while staying responsible for customers’ health.
Solution Timeline
“We are responsible for people’s lives, hiring a nutritionist can be costly, especially since we make seasonal foods, like pumpkin pie and apple crisp in the fall in order to use natural ingredients. Sending our recipes to a nutritionist, or out to a lab and having to wait three weeks for results is timely. By the time I’d get a recipe back, it wouldn’t be apple season anymore. And it’s not only that I’m doing seasonal recipes, I am constantly changing my recipes in general to improve them. Every time an ingredient was changed, or even the amount of it being used changed, I would have another expense. Instead of using timely and costly methods to provide consumers with our product’s information, we use MenuSano, a web-based nutritional calculator. It really has made this journey easier for me.”
